Nothin' New

Nothing interesting to report. My classes were all complete wastes of time today, which is quite perturbing, but at least it's Friday! Unfortunately, I have a TON of homework to do this weekend (2 papers, a lab report, and 3 posts to an online discussion board).


After my delicious salad last night, I knew I wanted a similar one for lunch! This one included mixed herbs and greens, toasted pine nuts, tomato, avocado, and 2 eggs that were in between hard and soft boiled. Topped with a simple dressing of extra virgin olive oil and balsamic vinegar (and lots of salt and pepper).

New Classes and the Gloriousness that is Runny Yolks

I registered for my classes for next quarter this morning and I guess I'm somewhat pleased. I'm taking a really interesting-sounding Post-Modern Lit class as well as an English class called "Angels and Demons: The Home in 19th Century Literature." No, not Dan Brown's Angels and Demons, hah. It focuses on: "hauntings, ghosts, crypts, prisons, insanity, murder, vampires, and decadence" in the Victorian home. Sounds pretty cool, right? Lastly, I'm taking another low-level Archaeology class to satisfy my minor. I had wanted to take an awesome Anthropology class called Comparative Study of Death which is all about how death and funeral/burial rituals are treated in other countries (much like that recent Taboo episode, if you saw it), but at the moment it is only open to majors :/.

ANYWAYS, enough about school, onto the food!

For lunch I had some tangy greek yogurt with granola and guava fruit spread, and a nutty end-piece of toast slathered with crunchy Nuttzo!

Dinner this evening was another pre-cooked Safeway meal from the deli, Shepherd's Pie! Well, it was called Shepherd's pie, but it's not lamb it's beef so it's really cottage pie. Shepherd's/Cottage Pie is one of my favorite dishes so I have a fairly high standard, but this was actually really good- it was so flavorful! It may look like mush on the plate (I had to transfer it out of the container I cooked it in), but that was some AMAZING mush! I ate it with a delicious green salad with a poached egg, which was equally as delicious! Runny yolks seriously make everything better, do they not?

Too much food!

After how much Mikey and I enjoyed California Pizza Kitchen for dinner last night, we decided to go again for lunch (hah, yes we're lame). I ate FAR to much! Bleh. Though my choices were fairly healthy, it was just way too much. I got:

  • Singapore Shrimp Rolls- Shrimp, baby broccoli, soy-glazed Shiitake mushrooms, spinach, carrots, rice noodles, bean sprouts, green onion and cilantro wrapped in rice paper. Served chilled with a sesame-ginger dipping sauce and Szechuan slaw. (646cal)
  • cup of Asparagus Soup- A creamless vegetarian soup garnished with garlic-herb croutons. (106cal)
=752 calories (See what I mean?! That is a TON for lunch!)


I was extremely full until quite late (around 9:00pm), and decided to have a much lower calorie dinner. I made a delectable sandwich (my fave kind- laughing cow + dill + veggie of choice!) and had some cottage cheese in a cantaloup half. Yum:

Only Tuesday :/

It was a fairly uneventful day- which isn't necessarily bad :), but does it not feel like it's the end of the week as apposed to the beginning? Maybe I'm just itching for Spring Break.


At Safeway last night I found these wonderful pre-cooked meals in the deli that you just heat up, the best part? they are pretty low-cal! For lunch today I decided to try out the Orange Chicken with Water Chestnuts which I ate over some leftover rice I had in the fridge. It was soooo yummy! I love water chestnuts; they have such an excellent texture. It was also quite filling and I can't believe it was so low in calories considering how much chicken there was.

For dinner, we changed it up and went somewhere we haven't been in years; we went to California Pizza Kitchen! I just love when restaurants provide nutritional information; it makes it so much easier for me! It was all sooooo delicious! I got:

  • a cup of the Tuscan White Bean Minestrone soup (140cal)

My midnight snack/dessert included one of my monstrous and amazing Everything Cookies and a bit of milk for dipping!

Major Sweet Tooth

I had my Anthropology test bright and early this morning an while I was really worried about it, I actually think it went pretty well :D!
After school, Mikey and I went to our typical lunch spot (Specialty's Cafe and Bakery) where I got my typical sandwich only this time with no cheese.
  • "The Vegetarian"- herb bread with stone ground mustard, avocado, lettuce, tomato, red onion, bell pepper, sprouts, dill pickle, pepperoncini, mushrooms, and cucumber (400ish cal)
=400 calories

And when we left the UVillage... I couldn't help myself- I grabbed another cupcake from Trophy Cupcakes. And yes, I ate it for dinner. Thank goodness no one reads this blog because I certainly feel embarrassed about my sweets consumption this past week... it's cookies for breakfast, cupcakes for dinner... YIKES!
But oh lordy, it was SO worth it! Given the chance I would choose to eat this for dinner over and over again. Wouldn't you? Look at that! The top is all marshmallow and then the cake is chocolate with delicious buttery graham crumbs!

Busy as a Bee!

I apologize for not posting this last night, but I didn't have time to add the pictures and whatnot with all of the studying I was doing!


What a hectic day! I have a huge test in my Archaeological Anthropology class tomorrow so that means a TON of studying. On top of that I also had a small paper due in one of my English classes that I did when I got up, and I decided to bake cookies!
I made some Everything Cookies which you can find on my other blog and boy are they tasty!


Well onto the most important part, the food!:


You should know by now that I'm absolutely horrible at eating breakfast; it's something I would like to change, but I don't feel like it's pressing at the moment. What is pressing is that I didn't eat today until 6:30! I got so caught up in school/baking that I completely forgot! Anyways, I suddenly realized when my stomach started rumbling like thunder and then quickly began to shove my face (and went hard on the sweets... it's just been that kind of weekend I guess)!


I had:

A bit later Mikey and I headed on over to Chipotle to grab dinner. I naturally got my usual salad, but there was new guy working who didn't make it as big and awesome as the usual people :(.

Cupcakes for dinner?

Last night Mikey and I went to see Shutter Island and it didn't get out until like 1am so I apologize for not posting. The movie was sooo good though! I totally did not see the ending coming at all! I highly recommend it.
Anyways, I had no pictures for my eats yesterday anyway, but here they are:


Lunch was my usual sandwich from Specialty's Cafe and Bakery sans the provolone cheese, mayo, and ranch, and Mikey and I ordered a cup of the Tomato Tortellini soup to taste. It came with a whole wheat roll that was delightfully sweet. We concurred that the soup tasted just like pasta with extra sauce! Yum!:

  • "The Vegetarian"- Herb Bread with stone ground mustard, swiss cheese, sprouts, lettuce, avocado, tomato, red onion, cucumber, dill pickle, mushrooms, bell peppers, and pepperoncini (440cal)
  • Few bites of soup with about 1/4 whole wheat roll (150cal?)

For dinner we went to Boom Noodle before our movie. I love Boom Noodle so much and get the exact same thing every time ha ha:
  • Shiitake Soba- buckwheat noodles, shiitake mushrooms, inari, tofu, green onion, kaiware sprouts, tenkasu, dashi broth (I always guess about 700-800cal)
=750 calories?

=1340 calories for the day

Onto today!
My boyfriend Mikey and I have been following the Winter Olympics pretty closely this year and he fell in love with curling (LOL) so this afternoon, we actually went to Granite Curling Club of Seattle (which is apparent like the best in the country?) to try it out. It was nice because it's only about 5 minutes away and they were having an open house where you could go learn to curl for $10 apiece. I was SHOCKED to see how many people were there- I'm talking at least 100 and the classes were going on all day. It was especially incredible because they didn't have any sort of advertisement. It was just people, like Mikey and me, who saw curling on the Olympics and looked up a place to go do it.
Anyways, I found it far too cold and rather boring (I tend to like high-impact sports as I used to so crew), but Mikey really loved it and might actually join the Spring league! Hah!
It was really nice thought because they had snacks and drinks out and they even have a bar inside! I helped myself to a few snacks for pre-curl:
  • a little sandwich pinwheel (maybe about an inch thick?) which included: turkey, white cheese, tomato, and mayo
  • a small handful of Harvest Cheddar Sun Chips
  • Some broccoli and carrots with veggie dip
=about 200 calories

Right after we finished we were both quite hungry and headed on over to the UVillage to find some foods! We found this great casual Italian place called Pallino Pastaria. We ordered an appetizer, which was actually an entree from the kid's menu (hah!), that was basically meatballs with honey mustard and BBQ for dipping. It also came with a little fruit skewer and some homemade chips:
I had two meatballs (which were so flavorful), most of the fruit skewer, and probably about half the chips.
For my "entree" I ordered a bowl of the Pappa di Pomodoro soup which was amazing! It was basically a really chunky tomato soup with some parmesan croutons. It also came with a nice hunk of bread which I happily used to mop up the soup. This is about half-eaten:

I'm not sure on the calorie count for this meal, but I would have to guess around 700?

On our way to the car we stopped in at Trophy Cupcakes and each grabbed a cupcake for later, which I ended up eating for dinner with a glass of milk because I am a glutton :p. I got the Chocolate Hazelnut- Valrhona Chocolate Cake with Nutella Buttercream Edged in Candied Hazelnuts. Oh my lord this was SO INCREDIBLE! I love Nutella so this was a real treat for me- so moist and chocolatey! The candied hazelnuts really put it over-the-top- easily one of the best things I've ever put in my mouth.
I would guess about 400 calories (sooo worth it!)

Back to Blogging

I apologize for not blogging yesterday (Wait, who am I apologizing to? Is there anyone out there?), but honestly, I just didn't feel like it. But I still tracked everything I ate- though with no photos:


No breakfast (I'm bad at that), but for lunch I went to Starbucks. Who knew they had healthy food options now? The last time I remember picking something up at Starbucks was a turkey sandwich in an airport terminal that I later found out was like 800 calories... how is that even possible? But anyways, apparently they did a major overhaul and everything is pretty much under 500 calories! And it was REALLY yummy! I got:

  • Chicken and Vegetable Wrap- a whole wheat wrap with peppers, carrots, red-pepper hummus, slivered Kalamata olives, and chicken (290cal)
  • 6 oz. fruit bowl- grapes, red apples, green apples, cantaloupe (though I gave Mikey the cantaloupe) (90cal- including cantaloupe so maybe 50cal?)
=340 calories


For dinner  I made a gnocchi dish with fresh gnocchi, browned butter, pine nuts, spinach, parmigiana reggiano, and garlic. It tuned out too garlicky and I wished that I had simply panfried the gnocchi as apposed to boiling it first but it was alright.

Late last night I realized I DEFINITELY not had enough calories so I had a nice big bowl of Total Blueberry Pomegranate with skim milk and a touch of cream (seriously, so good yet so bad for me).

Really, I honestly don't know how I am having trouble getting enough calories.

Okay, onto today!
For lunch today Mikey and I went to Panera! I, of course, got my usual You-Pick-2:
  • 1/2 greek salad (190cal)
  • chicken noodle soup (140cal)
  • whole grain baguette (190cal)
=520 calories

We didn't have dinner until super late (totally out of the ordinary for us, right?) because I wanted to finish up my paper first. I tried to make a very calorie-dense dinner for myself since apparently I don't know how to eat enough hah. The lentils were EXCELLENT and I would definitely get them again (though I realize you can't even see them under the cabbage). I made a tahini dipping sauce on the side with a bit of tahini, water, salt, pepper, and yogurt (yeah I didn't have any plain yogurt so I just used the acai- it sounds weird but it was actually quite good). This was such a filling meal (I think a little too filling :/)

The Weirdest Craving

Do you ever just get a craving and wonder, "Where the hell did that come from?" So, today, at literally 7am I got the strangest craving- Chicago-Style Hot Dogs... seriously.
I really have no idea why. I mean, it's not like I saw a hot dog stand recently, or something on TV, I just really, really wanted one!
Well, I decided that satiating this bizarre hankering was a must and immediately started Googling hot dog places near UW, ha ha. I found this great place called Taste of Chicago which obviously sounded perfect.
I informed my boyfriend of our lunch plans, and while he was a bit confused, we set out at right after school (and a quick swing by UPS) to go claim my dog.
We had recalled that there was a hot dog place in the University Village (Dante's Inferno Dogs) that was even closer than the other place, and since UPS was in there also, we thought we just might try that one (though we really had no clue where it was...).
Well, we soon discovered that the guy now only sells his hot dogs on the weekends, so I was quite sad. However, Mikey and I had a ton of fun roaming around the U Village discovering places we never knew existed there.
We found a Pasta & Co and decided to stop in since I really didn't know what they were, but I had seen them around. It was so awesome! It was like a gourmet deli that also had freshly made pastas. We tasted some samples and I bought some cute tart shells and Mikey got some pulled pork for dinner tonight and we were on our way (but we will definitely be back).
For lunch we settled on our normal lunch spot, Specialty's Cafe and Bakery, where I got my typical sandwich- soo good- but for some reason afterwards I REALLY wanted a caramel macchiato so we stopped into Starbucks so I could get my drink. It was wonderful, and delicious, and warm :). 


  • Samples at Pasta & Co- I had a cracker with some artichoke spread, a cracker with cheese, and a mini tart shell about the size of a quarter filled with a veggie bruschetta (150cal?)

=730 calories (way more than my usual!)

I got hungry at around 6:30, but wasn't ready for actual dinner yet so I decided on a snack- a banana smoothie! It was soooo good and filling. I always keep bananas in my freezer because I love them for smoothies and protein shakes so it was pretty easy. Just put all the ingredients in a blender and blend!

About 10:30ish after I finished my second big paper (!!!) I was ready for din (yeah, I know I eat super late, I'm a night owl!). I decided it was probably best that I eat the rest of my veggie burger and beans leftover from lunch the other day, so that made choosing my meal super easy. I also had some juicy fruit of the side!

Recovery

After all that rich food yesterday (see my Valentine's dinner HERE), today was definitely a day of recovery (and there were no classes today in honor of President's Day!). I got up late so I didn't eat breakfast, but for lunch Mikey and I went to The Ram because he really wanted their BBQ chicken sandwich. I opted for a Veggie Burger, which was really quite delicious, though I only ate half of it.

  • 1/2 veggie burger on whole wheat bun with Tabasco, lettuce, tomato, and pickles (228cal)
  • 1/2 side of Fireside Beans (130cal)
=358 calories

A bit later I was ready for a snack and decided to have the other half of my tofu/almond butter sandwich from yesterday.
  • 1/2 sandwich with firm tofu sauteed in shoyu soy sauce, almond butter, cucumber slices, and baby romaine on toasted Trader Joe's Honey and Oat bread (220cal?)
=220 calories

I didn't get hungry for dinner until pretty late, and decided I wanted some sort of stir-fry. I've really been in an Asian food mood as of late. I remembered the Shirataki noodles that I bought at Whole Foods a couple of days ago and thought those would make a great base (these noodles are awesome; they are made from tofu and are only 40 calories for an entire package!). I sauteed some green onions, ginger, and garlic in some sesame oil and added in some veggies, tofu and in just a bit I had a great (SUPER filling) meal. The dressing I made for it was soy sauce, mirin, sriracha, and oyster sauce.

Yeah, I gave in and calculated the calories for my cookies :(.
