After my delicious salad last night, I knew I wanted a similar one for lunch! This one included mixed herbs and greens, toasted pine nuts, tomato, avocado, and 2 eggs that were in between hard and soft boiled. Topped with a simple dressing of extra virgin olive oil and balsamic vinegar (and lots of salt and pepper).
